Homemade "Like Mama Use to Make" Pasta
  • 1½ Cup Semolina
  • 1½ Cup All purpose flour
  • 1 tsp Kosher salt
  • 4 Eggs
  • 1 Tbls. Olive oil
  • 1 Tbls. Water
  1. Mix semolina, flour and salt together in the bowl of a stand mixer.
  2. Add the eggs, olive oil and water to the dry ingredients and mix with the dough hook until well mixed.
  3. Knead the dough on a lightly floured surface for approximately 3 minutes until dough is smooth and not sticky.
  4. Wrap dough in plastic wrap and let sit at room temperature for at least an hour.
  5. Divide dough into thirds. (This just makes it more manageable to work with.)
  6. On a lightly floured surface, roll dough out, as thin as possible. (Of course, if you have a dough roller, you can use that instead.)
  7. Cut dough to desired shape.
  8. Drop in boiling, salted water and cook. (3-5 minutes.)
