Picture this, 3-4 friends, over for a late afternoon get together. Your porch is prepped with extra, over stuffed pillows. You’ve brought out your silver candle sticks along with a few chunky pillar candles. A vibrant vase is spilling over with fresh cut flowers from your garden. It is warm, but the sun is beginning to rest it’s head. Your friends begin to arrive, after work. They’re wondering what you have up your sleeve. After pleasant greetings, you place a Mango Rum Lassi in their hand.
This earthy, slightly fresh drink brings a smile to their faces after the first sip. You invite your guests to sit. A couple claim the porch swing, another nestles into an over sized wicker chair while your oldest friend stretches out on a comfy floor pillow. You pass around a tray of crispy pita chips topped with spicy eggplant tapanade and cucumber ribbons. Everyone settles in and the conversation begins to take on a life of it’s own. It’s one of those evenings where time was carved out with one purpose only, to make time to catch up.
Sometimes it’s just one simple recipe that inspires an event, big or small. Time together doesn’t always have to be a big production. We find that the simple ones tend to be our favorites.

Silkology Inspired Mango Rum Lassi
3/4 cup Silk Vanilla Almond milk
1/2 cup diced ripe mango (about 1/2 mango)
Pinch of salt
1 tsp fresh lemon juice
1/2 Tbsp honey
3/4 cup ice cubes
1 oz rum
2 Tbls. fresh mint
Mint and chopped almond for garnish
Place all ingredients in a blender until combined. Top with a sprig of fresh mint and sprinkling of chopped almonds.
