Grilled Lemony Ginger Sweet Potatoes

I don’t know about you, but we are always looking for a new way to prepare vegetables. We love to roast them, saute them, steam them and if you haven’t noticed lately, GRILL them! Even though life this month has been off the hook busy, Devon and I still try to tag team a good dinner and avoid, at all costs, carry out. Sometimes, I’ll get it started earlier in the day, or I’ll pull out meat from the freezer and he’ll get it started while I’m being the Transporter to my kids. Other times we work together in the kitchen to feed our hungry tribe.

We had picked up gorgeous sweet potatoes at the Farmer’s Market and wanted to make them. But, seeing as it was already 6pm and we were just getting started, the idea of baking them on a 90 degree day (without air conditioning) for over an hour, was not appealing. Can I just say, we are learning the value of the ADVANTIUM! We baked the sweet potatoes in the  GE Profile™ Advantium® oven in just 14 minutes. And because it was the Advantium, it did not create any heat in our kitchen.

  

They were even oozing with sweet potato sugary goodness!

We had the grill fired up to cook our pork filets. We didn’t do these in the Advantium, only because we had too many of them to fit. There are 7 in our family…with 4 adult sized teens and men. We decided to wedge the sweet potatoes, brush on a lemony, ginger marinade and throw them on the grill to crisp them up a bit.

  

We finished them with a sprinkling of cilantro from our herb pot and they hit the spot!

Grilled Lemony Ginger Sweet Potato Recipe

5 Sweet Potatoes with the skin on

Juice of two lemons

Zest of one lemon

1 tsp ground ginger

1/8 tsp cayenne pepper

1/2 C chopped, fresh cilantro

1. Bake sweet potatoes until completely cooked, either in the Advantium Oven on Sweet Potato setting, or in the oven at 350 degrees F for 1 hour.

2. Let them cool a little. Cut them into wedges.

3. Combine lemon juice, lemon zest, ginger and cayenne into a bowl.

4. Brush generously onto the sweet potato wedges.

5. Place them on a well heated, grill. Cooking them on each side.

6. Take off grill and sprinkle with cilantro and salt and pepper to tastes.

Serves 7-8 people
